Kick Butt Slow Cooker Chili
There are so many ways to make chili and it’s really simple! At the first hint of fall, my pantry gets stocked with tomatoes and beans and stays that way until spring. The smell of chili slow cooking all day often fills the house and it is soooo good! So good! I love coming home from work or a busy day to a delicious cooked meal. It’s the closest I’ve gotten to a personal chef. It makes me feel a little spoiled!
I usually make this recipe with ground turkey but we’ve also tried it with diced chicken breast and stew beef and it’s just as fantastic. You can switch it out for just about any meat you want as long as the quantity is the same. This recipe can also be made vegan if you like. You can add a meat substitute or more beans. However, you like. This recipe is very flexible!
This is such a fantastic option if you don’t have a lot of time for healthy meals. The diced peppers and onion can be replaced with a pre-chopped option. Fresh is best but if you wait to add it until an hour before it’s done you can use the frozen option. The frozen peppers and onions can get really mushy and break apart if they are cooked for an extended time but they do OK if you wait until the end to add them. Since all the ingredients get added at the beginning and slow cook all day, you can easily prep it the day before then throw it in the oven on the lowest setting or you can use your crockpot and let it cook all day. It gives those flavors time to marry together and become rich. Top it with avocado for a perfect combination especially if you choose to add the jalapeno.
We love leftovers so this recipe was designed to make a lot.
It’s fantastic warmed up the next day. I’ve taken it for lunch and we’ve reheated it for dinner. Super convenient and easy. If you don’t think you will use it in a day or two you can freeze the leftovers. We’ve used it up to four months after freezing and it still tasted great!
1 lb of ground turkey/chopped chicken breast/ beef
3 cups of tomato sauce
2 cups diced tomato
2 cups of black beans
1 cup of diced bell peppers
1/4 cup cilantro(or to taste)
1/2 cup diced onion
1 tsp salt
3 cloves of garlic
1 tsp cumin
1 tsp chili powder
1/8 cup jalapeño (optional)
1 tblspn liquid smoke(optional)
Add the tomatoes, tomato sauce, black beans, onions, jalapenos and bell peppers to the pot. Add the garlic, cumin, chili powder, salt, and liquid smoke to the mix.
In a pan, cook the meat of choice until lightly golden. Add the meat to the veggie mix.
The mixture should be loose. If it seems a little thick to you or if it will be slow cooking for more then six hours, you can add another can of sauce or 1/2 cup of water. The mixture will absorb the excess liquid and some will be evaporated so you will want the extra liquid so it doesn’t become too thick.
